Vegan Mashed Potatoes – Lent Compliant

The boys were eating steak kabobs and I just has a craving for some comfort food.  I decided some mashed potatoes would go well with the kabobs and my cravings.  Simple and delicious.  Honestly, I could have doubled the garlic amount and it would not have been overpowering, however the boys are not quite as big of garlics fans as I am.  I topped my servings with a little soy cheese for extra flavor.


  • 2 lbs Yukon Gold potatoes
  • 1 tsp vegetable oil
  • 8 garlic cloves, minced
  • 3/4 c soy milk
  • 3 tbsp margarine


  1. Dice potatoes (I make these skin on).
  2. Boil about 15 minutes, or until soft.
  3. Wait five minutes then heat oil over medium heat in small pan.
  4. Sauté garlic 30 seconds.
  5. Add soy milk, reduce to simmer.
  6. Keep warn until potatoes are cooked.
  7. Mash potatoes in large bowl. Add margarine. Add just enough soy milk/ garlic mixture to desired texture.
