Colombian Potato and Beef Pie

Continuing on my Colombian cooking kick, this is a wonderful “meat and potatoes” (literally) meal.  It takes about an hour to prepare and is a

traditional Colombian main dish.  It’s helpful to have an assistant to help put this together.  Kids can handle peeling or mashing the potatoes, stirring the meat or dicing eggs.  Otherwise, you have to be a pretty good multitasker to get it done in the shortest time.

You can serve it as is, with some melted cheese on top, or with criolla sauce spooned over it.  Whichever way you like best, you will still get the full flavor of the underlying dish.

Cook Time: 30 minutes

Servings: 8

Ingredients:

8 scallions

1/2 yellow onion

For the potatoes

  • 4 pounds potatoes (I used Russet, but red or white would work fine), peeled and quartered

  • 2 tsp salt
  • 2 eggs
  • 1 tbs butter
  • 1/2 cup onion mix
  • dried parsley

For the Meat

  • 3 tbs oil
  • 1 cup onion mix
  • 1/4 cup diced tomatoes
  • 1 cube, chicken bullion
  • 1 tbs minced garlic
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1 lb ground  beef

Directions

  1. Prepare the onion mix by dicing scallions and onions in a food processor, set aside for later use

  2. In large pot, put 10 cups water, salt and the eggs.  Bring to a boil
  3. Add potatoes, cover and boil lightly for 20 minutes
  4. As potatoes cook, saute 1/2 cup of the onion mix in butter over low heat for 8 minutes.  Remove from heat, shake dried parsley over it and set aside (You can begin meat prep immediately afterwards)
  5. When potatoes finish cooking, drain and transfer potatoes to large bowl.  Mash thoroughly.  Mix in onion mix.
  6. Peel and dice eggs separately and set aside.
  7. Prepare meat by sauteing oil, remainder of onion mix, tomatoes, bouillon cube, garlic, cumin and salt, over medium heat for 5 minutes.
  8. Reduce heat to low, and add ground beef.  Break it up into small pieces and cook for 10 minutes.  Remove from heat and set aside.
  9. Preheat oven to 350°.  Spray a 8×8 glass baking dish with oil.  Place half of the potatoes in dish and spread evenly, compacting it as you go.
  10. Spread the meat filling evenly over the potatoes, and sprinkle diced eggs over meat.
  11. Cover with the remainder of the potatoes.
  12. Bake for 20 minutes and serve hot!
