Macaroni and Cheese with Sausage

Here is an oldie but a goodie.  Again, overdoing the comfort food genre a bit, but this is one of the most anticipated dishes around my household.  It is a basic, from scratch mac & cheese, topped with sliced sausage for extra flavor.  It ends up a bit greasy, but nobody really complains.

Prep Time: 25 minutes

Cook Time: 30  minutes

Serves: 6


  • 6 ounces elbow macaroni
  • 3 tbs butter
  • 1/4 cup finely chopped onion
  • 2 tbs flour
  • 1/2 tsp salt
  • dash pepper
  • 2 cups milk
  • 2 cups cubed cheddar or colby/jack cheese
  • 2 sausage links, precooked and sliced thin
  • Grated parmesan cheese


  1. Cook macaroni per package directions and drain; set aside.
  2. In a saucepan, melt butter.
  3. Cook onion in butter until tender.  Do not brown!
  4. Stir in flour, salt and pepper
  5. Add milk all at once and cook until thickened and bubbly
  6. Cook for 2 more minutes
  7. Add cubed cheese and stir until melted
  8. Stir macaroni into cheese sauce
  9. Turn into 1 1/2 quarter casserole
  10. Space sliced sausages across the top
  11. Sprinkle with parmesan cheese
  12. Bake at 350° for 30 – 35 minutes.

If your family likes a bit of spice, sprinkle in some red pepper flakes when you stir in the macaroni!
