Herbed Pork Medallions

This is a simple recipe that looks fancier than it is!  Great to throw together and impress company, while not stressing yourself out too much.  It is relatively healthy, coming in at 200 calories a serving.  This goes good with a tossed salad, or sauteed spinach.  Kid and adult friendly!  I usually increase garlic powder, or sub garlic salt for regular salt.

Prep Time: 15 minutes

Cook Time: 10 minutes

Serves: 6

Ingredients

  • 1 1/2 lb pork tenderloin
  • 2 tbs margarine, melted
  • 1/4 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp dried tarragon
  • 1/2 tsp dried thyme
  • 1/2 tsp paprika
  • 1/4 tsp pepper
  • 1/8 tsp cayenne pepper
  • 1 tbs honey

Directions

  1. Cut pork into 1/2 inch slices and pound to a flat medallion.
  2. Combine margarine and garlic powder, brush over pork (both sides)
  3. Combine all dry seasonings and srpinkle over top
  4. Place on greased cookie sheets and broil 4-6  inches from heat for 5 minutes
  5. Turn and broil 3 minutes longer
  6. Brush with honey and broil for another minute or until juices are clear.
