The Classic SOS – “Sh*t on a Shingle”

My boys get a laugh out of the name every time I make this, but they ask for it over and over.  It is quick, easy, and worth the laugh.  This is kind of a come home, look at the empty cupboard and fridge, and surrender dinner.

Ingredients

  • 1 cup whole kernel corn, drained
  • 8 oz cream cheese (solid block, not whipped)
  • 1 can cream of mushroom soup
  • 2 tbs chopped onions
  • 1/2 tsp salt
  • 1 1/2 lbs ground beef
  • 1/2 tsp garlic powder
  • pepper to taste
  • bread and butter

Directions:

  1. Brown the ground beef and onion and drain
  2. Add cream cheese, corn, soup and spices
  3. Bring to simmer over medium heat, stirring to dissolve the cheese
  4. Simmer for about 3-4 minutes, stirring occasionally
  5. Serve over buttered toast
