Oven Roasted Baby Red Potatoes

This is a quick roasted potato recipe that I used.  I  sprayed the potatoes with Olive Oil spray to help with the coating.  The result was a passable roasted potato but the ease of preparation makes this a recipe worthy of a repeat.  Between the three of us, no leftovers!

Ingredients

  • Approx 1lb Baby Red Potatoes
  • 2Tbsp Extra Virgin Olive Oil (EVOO)
  • 1Tsp Salt
  • 1Tsp Pepper
  • 2Tbsp Onion Powder
  • 2Tbsp Garlic Powder

Directions

  1. Pre-heat oven to 425 degrees
  2. Wash and half potatoes (leave skin on) and place on cookie sheet.
  3. Spray potatoes with olive oil spray/
  4. Combine dry ingredients in bowl and mix thoroughly
  5. Coat potatoes with EVOO and sprinkle salt, pepper, onion powder, and garlic powder liberally over potatoes. Toss gently.
  6. Cook potatoes for about 30 minutes or until done. (fork will go through when done)
