Green Beans with Pine Nuts

A new side dish with some of my favorite things – pine nuts and bacon!

Serves 3 to 4


Green Beans with Pine Nuts

  • 1 lb Fresh Green Beans
  • 4 slices Bacon (diced)
  • 1/4 cup Pine Nuts (toasted)
  • 4 cloves Garlic (thin sliced)
  • 1 Tablespoon Butter
  • Salt and Pepper to taste


  1. Clean and snap the Green Beans and boil in salted water for 6 to 7 minutes until “cooked but crisp” stage.  Drain well.
  2. Toast Pine Nuts and set aside.
  3. Cook diced Bacon until fat is rendered but Bacon is still soft.
  4. Remove Bacon from pan, leaving dippings.
  5. Add sliced garlic to Bacon renderings and gently heat to release flavor.
  6. Turn up heat to medium add Butter, Green Beans and Bacon cook for 3 to 5 minutes or until Beans reach desired doneness.
  7.  Add Pine Nuts during final 2 minutes.
  8. Salt and Pepper to taste.
