German Fried Potatoes

Decided to make a little German meal.  Along with our brats and kraut, I cooked up some potatoes.  This recipe was cobbled together from several on the net.  The kids devoured it!  Some people do this adding a little oil and slicing the onions so you are frying the rings with the potatoes.  That is cook too, but this turned out really well!

Serves 4-6


  • 8 slices bacon
  • 2 lbs potatoes peeled and thinly sliced
  • 1 med. onion, diced
  • Salt and pepper to taste


1. Peel and slice potatoes.  Boil for 8 minutes and drain.  Set aside to cool.
2. Cut bacon into 1-2 inch squares and brown in pan.
3. Remove bacon and leave drippings.
4. Over medium heat, add potatoes and fry in bacon drippings, turning regularly.
5. As potatoes begin to brown, add onion.
6. As potatoes brown, but before they are crisp, crumble 1/2 bacon back into pan.
7. Season with salt and pepper and serve.
